Spring rolls are a timeless favorite for many food lovers, but making them at home might seem intimidating. Fear not! In my latest YouTube video, we show you how to make delicious homemade spring rolls from scratch, including options with rotisserie chicken, shrimp, and even a low-carb version. Whether you’re looking for a quick weeknight dinner or an impressive appetizer for guests, these spring rolls are fresh, flavorful, and completely customizable.
Why Make Spring Rolls at Home?
Store-bought spring rolls often contain preservatives, artificial flavors, or low-quality ingredients. Making them at home allows you to:
- Control the ingredients and freshness
- Adjust flavors to your liking
- Make low-carb or healthier versions easily
- Enjoy the fun of rolling and assembling them yourself for much less than store bought
Plus, homemade spring rolls are surprisingly quick to make once you get the hang of it!
Ingredients You’ll Need
Depending on the version you choose, here’s what you’ll need:
For Rotisserie Chicken Spring Rolls:
- Shredded rotisserie chicken

- Leaf lettuce
- Julienned vegetables: carrots, cucumbers, spring onions, bell peppers – you name it
- Optional fresh herbs: mint, cilantro, basil

For Shrimp Spring Rolls:
- Cooked shrimp, sliced in half lengthwise
- Rice paper wrappers
- Lettuce, cucumber, carrots, bean sprouts or whatever else you find in your fridge
- Rice vermicelli noodles
- Optional Fresh herbs (mint, cilantro, basil)
For Low-Carb Spring Rolls:
- For “lower carb” substitute rice noodles with shredded cabbage or bean sprouts
- For fully low carb substitute rice paper with low-carb wrappers or large leafy greens
- Shredded chicken or shrimp
- Low-carb vegetables (zucchini, bell peppers, cabbage)
- Fresh herbs – optional
Step-by-Step Instructions
- Prepare the Filling: Shred chicken or slice shrimp. Julienne vegetables.
- Soften Rice Paper: Dip rice paper in warm water for a few seconds until pliable.
- Assemble: Place the filling in the center of the wrapper. Fold in the sides and roll tightly.
- Serve: Enjoy fresh with dipping sauces such as peanut sauce, hoisin sauce, or spicy chili sauce.

Spring Rolls
Ingredients
- One or more proteins: shrimp beef strips, pork strips, chicken strips or even rotisserie chicken or leftover pre-cooked meat
- Leaf Lettuce ribs cut out
- Cucumber
- Spring Onions
- Carrots
- Rice Vermicelli
- Spring Roll Rice Paper – I use 22cm/8.6 inches. Smaller is harder to roll so maybe start with these and work your way down.
Instructions
Prep:
- ➡️ Cook the rice noodles in salted water – if you’re using rice noodles, see video
- ➡️ Cook your protein if it’s not pre-cooked. I simply pan-roast mine with a little salt. No need to be fancy, you dip this in soy sauce or another dip later.
- ➡️ Prep your vegetables. You want thin strips or where suitable grate them on the coarse side of a box grater
Assembly:
- ➡️ Soak a sheet of rice paper in warm/hot water. Start with one round in the bowl as shown and go for a second round if the sheet doesn’t soften enough within a minute
- ➡️ Lay the soaked sheet on a slick surface. A wooden board is semi-optimal, if using one make sure it’s pretty wet otherwise the sheet will stick and tear
- ➡️ Work quickly now: lay a piece of lettuce (no ribs! Just leaf!) in the lower third of the sheet
- ➡️ Place protein and vegetables on top. A few each is plenty. Don’t overfill! Go a bit thicker than a thumb
- ➡️ Now fold the bottom over the filling, tuck in on the other side and carefully pull towards you to tighten the wrapper
- ➡️ Roll a half turn forward while keeping tension.
- ➡️ Fold in the sides and roll all the way up
- ➡️ If using shrimp or other items you want to display, don’t place them on the initial pile. Do the fold and half roll, then place the items pretty side down right in front of the roll, fold the sides in and roll it up. Now the items shine thru the single layer of wrapper.
